This sheet pan salmon marinated in a sweet wasabi sauce will spice up any meal and is super quick and easy to make for busy weeknights!
Sweet Wasabi Soy Salmon
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
1 tablespoon fish sauce
1 teaspoon sesame oil
2 tablespoons wasabi sauce or paste (paste will be a little spicier)
3 tablespoons brown sugar
1 tablespoon lime juice
2 pounds salmon filet, cut into portion sizes
Combine the soy, vinegar, fish sauce, sesame oil, wasabi, brown sugar, and lime juice in a shallow baking dish. Place the salmon in the marinade and turn to fully coat each portion. Let marinate for 30 minutes.
Preheat oven to 375 degrees.
Line a rimmed baking sheet with foil. Place the salmon on the sheet, skin-side-down, and drizzle any remaining marinade over the tops. Bake for 12 to 15 minutes until the fish flakes with a fork in the thickest part and the inside is translucent pink.
Serve over rice with peas or asparagus and spoon any sauce left on the pan over the top.
