Dish off the Block
Are you heading to a cookout on the Fourth of July? Celebrate the star-spangled banner in style and bring this salad that tastes as good as it looks. God bless America!
Fourth of July Berries and Feta Salad with Poppy Seed Dressing
5 ounces baby arugula and spinach (or your favorite mixed greens)
1 pint blueberries
1 quart strawberries, sliced
8-ounce block of feta cheese, crumbled
¼ cup milk
½ cup mayonnaise
1/3 cup sugar
2 teaspoons poppy seeds
2 teaspoons cider vinegar
Spread the greens in an even layer on a large rectangular or square platter. Place the blueberries in the upper left hand corner and layer the strawberries and feta in stripes to mimic the American flag.
Combine the remaining ingredients in a large jar and shake vigorously until well-combined.
Just before serving, drizzle the dressing over the salad and serve more on the side.
